What's Body One Cooking in the Kitchen

We here at Body One have had some extra time lately to get creative in the kitchen! Here are some recipes we’ve made and can vouch for their tastiness! 


Let’s start with an appetizer (can also be eaten as a main dish): 


Mediterranean Salad with Crunchy Garbanzo Beans by yours truly Talia


Ingredients: 


Salad: 

Persian cucumbers (6)

Roma tomatoes (4)

Red onion (1 medium)

Radishes (1 bunch approx. 6)

Avocado (amount up to you, but save for the end to place on top)

Parsely (1 bunch)

Lemons (3 small or 2 big)

Olive oil (¼ cup)

Salt (1 tbsp)

Pepper (1 tbsp)


Instructions: 

  • Chop all of the cucumbers, tomatoes, radishes, parsley, and onions as fine as you can and then place in a large bowl. 

  • Squeeze all of the lemons, pour the olive oil, and the salt/pepper onto the salad.

  • Mix all together well and portion out into your personal bowls. 

  • Top with sliced avocado and garbanzo beans! 


Beans:

***Preheat the oven at 425 degrees with the baking sheet inside. 

  • Rinse and wash 1-2 cans of garbanzo beans 

  • Pat dry and transfer into a large bowl 

  • Drizzle olive oil all over (don’t be shy) 

  • Put 1 tbsp of each in the bowl 

Salt, pepper, turmeric, cumin, garlic powder, onion powder. 

  • Mix well and then transfer onto the baking sheet once preheated

  • Leave in the oven for 30 minutes, periodically shaking the pan to move the beans around.
